Götzinger use only fresh Australian Pork for our
Bone in Christmas Hams. Many of our Boneless Hams are made from Leg or Shoulder
using the finest Australian Pork or alternatively are produced out of the
highest quality of imported pork available. Our Hams are pickled with a honey
cure and naturally wood smoked for depth of flavour and a beautiful shade
golden brown.

Spiced Ginger Beer and Bourbon Ham Glaze
RECIPE

Ingredients
- Bourbon - 700ml
- Bundaberg Ginger Beer - 750ml
- Orange Marmalade - 740g
- Brown Sugar - 1kg
- Star Anise - Roughly 10 pieces
- Cinnamon - Roughly 4 pieces
- Cloves - Roughly 7 pieces

Method
- Mix all of the ingredients together in a saucepan.
- Put the saucepan on the stove and turn to a low heat to reduce.
- Once the glaze has reduced to a syrupy consistency remove from the heat.
- Either cool then store in the fridge for later use or glaze your ham immediately.

Cherry, Orange and Cointreau Ham glaze

- Morello Cherries + juice - 680g
- Cointreau – 700ml
- Brown sugar – 2 cups
- Star anise – roughly 10 pieces
- Cinnamon – roughly 4 pieces
- Cloves – roughly 7 pieces

- Mix all of the ingredients together in a saucepan.
- Put the saucepan on the stove and turn to a low heat to reduce.
