Gorgeous little tartlets, beaming with fresh summer flavours. Featuring our Spanish Chorizo, these are perfect for summer dinner parties, Christmas lunches or New Years Eve parties! 

  • Ingredients

    • Olive oil – 2tb sp.
    • Red onions (sliced) – 2
    • Salt – to season
    • Balsamic vinegar – 2tb sp.
    • Cracked black pepper – to season
    • Puff pastry – 1 square
    • Egg (whisked) – 1
    • Gotzinger Spanish Chorizo (1.5cm slices) – 2 sausages
    • Cherry tomatoes (cut in half) – 12
    • Baby bocconcini – 12
    • Olive oil – 2tb sp.
    • Basil leaves – to garnish

  • Instructions

    • Set the oven to 180°c.
    • Add the olive oil to a fry pan, followed by the onions. Season with
      salt and pepper.
    • Stir the onions regularly and cook until they’re soft and
      translucent.
    • Stir the balsamic vinegar through the onions and cook for a further
      2 minutes then set aside to cool.
    • Cut the pastry sheets into 12 squares.
    • Brush the egg around the edges of each square.
    • Spoon a tablespoon of the caramelized onions into the centre of each
      pastry square.
    • Top the onions with 2 slices of Spanish Chorizo, 2 tomato halves, 1
      bocconcini, a light drizzle of olive oil on each and season with salt and
      pepper
    • Place the tray in the oven and bake for 30 minutes.
    • Remove from the oven and
      serve with fresh basil leaves to garnish.
