Bring a burst of Christmas cheer to your table with these Wood Smoked Kabana, Cranberry and Brie Puff Pastry Bites - little parcels of buttery pastry and rich, savoury-sweet flavour dreamed up by @justflavourco.

  • Ingredients

    • 1 sheet frozen puff pastry, thawed, cut into 16 (four by four)
    • 125g Thomas Dux Brie, cut into 16 small pieces (use about ¾ of the brie to prevent overfilling)
    • 1 x 200g Gotzinger Wood Smoked Kabana, cut into 16 pieces
    • ¼ cup cranberry sauce
    • 1 egg + dash milk for egg wash

    To serve:

    • 2 tbsp hot honey to drizzle
    • Fresh thyme
  • Instructions

    1. Preheat oven to 200°c fan and lightly grease a mini muffin tray. Cut puff pastry into 16 squares (four by four) and press into muffin holes.
    2. Add a small piece of brie, a slice of Gotzinger Smoked Kabana and ½ tsp cranberry sauce to each. Brush pastry edges with egg wash.
    3. Bake for 15 minutes, until golden and puffed. Cool in the tray slightly before transferring to a serving plate.
    4. Warm 2 tbsp honey until runny, then drizzle over the warm bites. Garnish with fresh herbs and serve immediately, enjoy!
