Add a touch of Mexican Fiesta to your week with this super simple family friendly Tex Mex Bake!

  • Ingredients

    • Salt – to season
    • Pasta of choice – 600g
    • Brown onion (diced) – 1
    • Red capsicum (diced) – 1
    • Cumin – 2tsp.
    • Smoked paprika – 2tsp.
    • Black beans 400g tin (drained) – 1
    • Diced tomatoes 400g tin – 1
    • Götzinger Smallgoods Tex Mex Brat – (sliced) 300g
    • Pepper – to season
    • Shredded tasty cheese – 2 cups
    • Fresh coriander sprigs – to garnish
    • Sour cream – to serve
    • Pickled jalapeño chillies – to serve

  • Instructions

    • Set the oven to 180°c.
    • Bring a large pot of seasoned water to the boil, then add your pasta and cook for 6 minutes. Once the pasta is ready, strain the water and set the pasta aside in your large baking dish.
    • Heat the olive oil in a medium pan and then add your onion and capsicum.
    • Sauté until the vegetables have softened and then stir through the cumin and smoked paprika.
    • Add the sautéed vegetables, black beans, diced tomatoes and sliced brats
      into the baking dish. Season with salt and pepper and mix to combine.
    • Once thoroughly mixed through, evenly spread the shredded cheese over the top.
    • Place the tray in the oven to bake for 25 minutes or until golden brown on top.
    • Remove from the oven and garnish with fresh coriander sprigs and serve with your choice of sour cream or pickled jalapeño chillies if you want to add a touch of spice!
