Inspired by the fresh tastes of Mexico, Götzinger’s new Tex Mex Brat adds a pop of flavour to this colourful burrito bowl. So quick and easy to make for a delicious weeknight dinner!

  • Ingredients

    • Truss tomato (diced) – 1
    • Red onion (diced) – ½
    • Lime juice – squeeze
    • Salt – to season
    • Olive oil – 1.5tsp
    • Gotzinger Smallgoods Tex Mex Brat – 400g
    • Corn on the cob (husk removed) – 3
    • Microwavable white rice cup – 4 portions
    • Avocado – 1
    • Lime – to garnish
    • Coriander – to garnish

  • Instructions

    • Create a simple salsa by mixing the diced tomato and onion, season with salt and a squeeze of lime juice. Set aside.
    • Heat the BBQ or a pan to a medium heat, if using the pan add olive oil. Put the brats in the pan or on the BBQ and cook for 5-10 minutes. Turn regularly.
    • Once the brats are heated through, remove from the pan or BBQ and set aside.
    • Turn up the heat and place the corn cobs on the grill or into the pan. Turn regularly until each side is charred. Once they are ready remove from heat.
    • Slice the charred corn kernel off the cob, season with salt and set aside in a bowl.
    • Slice the brats into 2cm thick slices.
    • Microwave your rice as per instructions on the pack.
    • To assemble each burrito bowl, place one rice portion in the bowl, followed by ¼ of the corn, ¼ of the salsa, ¼ of the brat slices, and ¼ of an avocado. Garnish with coriander and a wedge of lime.
