Elevate your next celebration with oozy gooey baked brie with juicy blackberries serve with bacon wrapped pastry dippers. 

  • Ingredients

    • Gotzinger American Rindless Bacon – 200g
    • Puff pastry (sliced into 3cm strips) – 1 sheet
    • Egg (whisked) – 1
    • Brie – 200g
    • Rosemary – 2 sprigs (sliced into 5 pieces)
    • Black berries - 5

  • Instructions

    • Set the oven to 180°c
    • Wrap 1 strip of pastry around 1 piece of bacon and place in a lined
      tray. Repeat with remaining bacon and pastry.
    • Brush the exposed pastry with the whisked egg.
    • Bake in the oven for 30 minutes.
    • Carefully slice a thin layer of the “skin” off the top of the brie.
    • Sit the brie on a large sheet of alfoil and build a tight
      bowl/cocoon around it.
    • Poke the rosemary pieces into the exposed brie and dot the black
      berries around.
    • Bake in the oven for 10 minutes and serve immediately.
    • To serve, place the brie in
      the centre of a platter and scatter the bacon and pastry dippers around.
