A light and fresh pasta dish made with Gotzinger’s The Big Cheese Kransky, garlic, lemon and herbs. Quick to prepare and full of flavour, it’s an easy meal the whole family can enjoy. Ideal for camping trips thanks to its simple ingredients and minimal prep, it’s just as good served warm by the campfire as it is at home for a simple weeknight dinner or as a versatile side.   • Ingredients

    • 1 pack Gotzinger Big Cheese Kransky
    • 400g short pasta (fusilli/spirals, penne, etc.)
    • 1 tbsp olive oil
    • 1 large brown onion, finely diced
    • 6 cloves garlic, finely chopped
    • 1–2 tsp chilli flakes (to taste)
    • 50g butter
    • ½ lemon, juiced (to taste)
    • 100g baby spinach
    • Large handful fresh basil, sliced
    • 60–80g parmesan cheese, grated (split for cooking + finishing)
    • Cracked black pepper, to taste
  • Instructions

    1. Bring a large pot of salted water to a boil. Cook pasta according to packet instructions. Reserve a splash of pasta water, then drain and set aside.
    2. Slice Big Cheese Kransky into thick rounds. Heat olive oil in a large frying pan over medium heat and cook for 4–5 minutes, turning until golden and lightly crisped. Remove and set aside.
    3. In the same pan (medium heat), add diced onion and cook until translucent. Add garlic and chilli flakes and cook for 1 minute until fragrant, then add butter and allow it to melt.
    4. Return the kransky to the pan and toss to coat in the butter, garlic and chilli mixture. Add the cooked pasta with a splash of pasta water if needed, then add half the grated parmesan and mix through.
    5. Add sliced basil and fold through. Add spinach and toss once or twice. The residual heat will wilt the spinach. Squeeze over lemon juice to taste and season with cracked pepper.
    6. Top with remaining parmesan & basil and serve warm.
