Creamy potato bake is always a family favourite, but this heartwarming recipe has pieces of crispy Double Smoked Speck layered through as well as caramelised onion and a golden cheesy top. Smoky, delicious and decadent! 

  • Ingredients

    • Gotzinger Double Smoked Speck (skin removed and cut
      into batons) – 450g
    • Brown onions (finely sliced) – 2
    • Washed white potatoes (cut into 5mm slices) – 1kg
    • Sour cream – 300ml
    • Thickened cream – 400ml
    • Chicken stock (warm) – 400ml
    • Cracked black pepper – to season
    • Shredded tasty cheddar cheese – 250g
    • Chives (finely chopped) – to garnish
  • Instructions

    • Set the oven to 180°C, fan forced.
    • Add the batons of speck into a frying pan and cook
      until crispy on all sides and most of the fat has rendered down.
    • Remove the speck batons from the pan and set aside.
      Leave the rendered fat in the pan.
    • Add the sliced onions to the same pan and cook until
      caramelized on a low-medium heat – stir regularly.
    • To assemble, line the base of a baking dish (our dish
      was 6.7cm (H) x 43cm (W) x
      24.5cm (D)) with a layer of potato slices. Follow with a layer of 1/2 the
      caramelized onions and scatter 1/3 of the crispy speck. Repeat another layer
      of this exactly. Then top the second layer with just potato.
    • In a large mixing bowl or pouring jug, combine the
      sour cream, thickened cream, chicken stock and season with cracked black
      pepper (this may be a bit lumpy but will meld together when heated in the oven).
    • Pour the cream mixture over the layers in the baking
      dish. Shake gently to allow the mixture to fill all the gaps.
    • Place the dish in the oven and bake for 50 minutes.
    • After 50 minutes, remove the dish from the oven and
      scatter the shredded cheese over the top and the remaining crispy batons of
      speck.
    • Place back in the oven and cook for a further 20 – 30 minutes
      or until the cheese is golden.
    • Remove from the oven and allow for the bake to sit for
      15 – 30 minutes before serving.
    • Garnish with chopped chives and enjoy!
