Serves 2

Up your breakfast game with these smoky and delicious Corn and
Jalapeño and Cheese Brat Fritters. Serve with your choice of eggs, guacamole,
sour cream, relish or whatever it is you love to eat at breakfast time!

  • Ingredients

    • Plain flour – 1/2 cup
    • Baking power – ¼ teaspoon
    • Egg – 1
    • Milk – 4tb sp.
    • Salt – to season
    • Black cracked pepper – to season
    • Corn kernals – 1 cup
    • Götzinger Smallgoods Jalapeño and Cheese Brat (diced)
      – 2 sausages (200g)
    • Coriander (chopped) – 2tb sp.
    • Olive oil – 4tb sp.

  • Instructions

    • In a mixing bowl combine flour, baking powder, an egg,
      milk and season with salt and pepper. Mix well until the mixture is smooth.
    • Fold the corn kernels, diced sausage and coriander
      through the batter mixture.
    • Heat a large fry pan and the olive oil.
    • The mixture will make 4 fritters, so cook the fritters
      in two batches. Scoop 2 quarters of the batter into the frying pan to make two
      fritters. Cook for 3 minutes on each side before removing the fritters and
      draining the oil on paper towel. Repeat cooking method with the second batch.
    • Once the fritters are
      cooked serve with your choice of eggs, guacamole, sour cream, relish or
      whatever it is you love to eat at breakfast time!
