  • Ingredients

    • Gotzinger Continental Franks - 300g
    • Rocket and baby spinach mix - 200g
    • Peaches - 4
    • Small red onion - 1
    • Fetta - 50g
    • Balsamic glaze
    • Flat leaf continental parsley - to garnish
  • Instructions

    Prep

    • Slice the Continental Franks on an angle.
    • Cut the peaches into wedges (quarters or eighths) and remove seed
    • Peel and thinly slice red onion.

    Cook

    • On a BBQ grill plate, medium - high heat, place peaches and Continental Franks to char on each side.
    • On serving platter, place salad leaves, and top with Continental Franks, peaches, onion, and crumbled feta over the top. Dress with balsamic glaze and garnish with fresh parsley leaves.
