Spice up your breakfast this weekend with these golden, crispy and delicious Tex Mex Corn Fritters. The corn fritters are packed full of flavour thanks to the pieces of Tex Mex Brat mixed within the batter. Treat your loved ones…or why not treat yourself to a fiesta for breakfast this weekend!

  • Ingredients

    • Plain flour – 1/2 cup
    • Baking power – ¼ teaspoon
    • Egg – 1
    • Milk – 4tb sp.
    • Salt – to season
    • Black cracked pepper – to season
    • Corn kernels – 1 cup
    • Götzinger Smallgoods Texas Brat (diced) – 2 brats (200g)
    • Shredded tasty cheese – ½ cup
    • Coriander (chopped) – 2tb sp.
    • Olive oil – 4tb sp.

  • Instructions

    • In a mixing bowl combine flour, baking powder, an egg, milk and season with salt and pepper. Mix well until the mixture is smooth.
    • Fold the corn kernels, diced brats, shredded cheese and coriander through the batter mixture.
    • Heat a large fry pan and the olive oil.
    • To make four fritters, divide the batter into four, then scoop into the pan. Flatten the mixture gently for even cooking. Cook for 3 minutes on each side before removing the fritters and draining the oil on paper towel.
    • Once the fritters are cooked serve with your choice of eggs, guacamole, sour cream, relish or whatever it is you love to eat at breakfast time!
