Brussels Sprouts have never tasted so good! Roasted with pieces of our smoky and American Rindless Bacon dressed with pomegranate gems, goats cheese and toasted almonds. This is the ultimate side dish to add to your Christmas lunch spread. 

  • Ingredients

    • Brussels sprouts – 800g
    • Gotzinger Smallgoods American Rindless Bacon (diced) – 200g
    • Olive oil – 2tb sp.
    • Salt – to season
    • Cracked black pepper – to season
    • Goats cheese – 40g
    • Pomegranate seeds – ¼ of a pomegranate
    • Slivered almonds (roasted)
      – ¼ cup

  • Instructions

    • Set the oven to 180°c.
    • Sliced the ends off the brussels sprouts, remove the outer leaves,
      cut the sprouts in half and wash well then drain. Put the sprouts into a baking
      tray.
    • Add the diced American Rindless Bacon and olive oil to brussels
      sprouts, season with salt and pepper and toss to combine.
    • Place the tray in the oven for 30 minutes and toss intermittently
      throughout the cook.
    • Once the brussels sprouts are ready, remove from the oven.
    • To serve, crumble goats
      cheese over, sprinkle the pomegranate seeds and the toasted almonds.
