Be taken to the Mediterranean in just one bite!

  • Ingredients

    • Götzinger’s Spanish Chorizo
      Sausage – 200g (sliced into 1inch thick slices)
    • Olive oil – optional
    • Pre-peeled and raw prawns – 10pieces
    • Salt – to season
    • Aioli – 10 tsp.
    • Lemon wedges – to serve

  • Instructions

    • Heat a medium sized fry pan and cook the
      chorizo until crispy and coloured on each side. The chorizo should release
      enough fat so no oil should be required however if they start to stick add a
      drizzle of olive oil. Remove from pan when ready and set aside.
    • Lightly season the prawns with salt and
      place in the same pan that you previously cooked the chorizo. The prawns will
      use the fat from the chorizo to cook.
    • Turn the prawns once one side is opaque
      and then cook on the other side for 30 seconds – 1 minute and remove from heat.
    • Skewer a toothpick through a prawn
      followed by a piece of chorizo and repeat until all prawns and chorizo are
      skewered.
    • Put 10 x 1tsp of aioli spread evenly
      across a plater then place a prawn and chorizo skewer onto each dollop of
      aioli.
    • Serve with lemon wedges.
