A delightfully tasty and easy dish to prepare, this Smoky Texas Brat Frittata is
the perfect dish to bring to family gatherings or to enjoy on the weekend at
lunch.

  • Ingredients

    • Medium size white potato (medium diced) – 1
    • Salt – to season
    • Olive oil – 2 tsp.
    • Brown onion (diced) – 1
    • Red capsicum (diced) – ½
    • Eggs – 6
    • Milk – 1/8 cup
    • Cracked black pepper – to season
    • Götzinger Smallgoods Smoky Texas Brat (sliced 2cm thick) – 200g
    • Shredded tasty cheese – ½ cup
    • Parsley (finely chopped) – to garnish

  • Instructions

    • Set the oven to 180°c.
    • Fill a medium pot with cold water, season with salt and add the diced potatoes. Put on the stove and bring to the boil. Cook the potatoes until soft to pierce with a sharp knife.
    • Drain the water and set aside the potatoes.
    • In a fry pan, heat the olive oil on a medium heat then add the onion and the capsicum – season with salt. Cook until both onions and capsicum have softened.
    • In a bowl, whisk the eggs and milk and season with salt and pepper
    • If you have an oven safe pan you can cook the frittata in the same pan or you can use an oven safe baking dish.
    • Combine the onions, capsicum, potato and slices of brats in your cooking vessel then pour over the egg mixture. Ensure that the filling is covered evenly, then scatter the shredded cheese over the top.
    • Bake in the oven for 25 – 30 minutes until the top is golden and the centre is set.
    • Garnish with parsley and serve.
